If you are looking for something fresh, quick and light then you have just found it! This is the absolute best recipe for chicken salad! You can easily make this recipe Whole 30 friendly by using a Whole 30 compliant mayo and serving it on cucumbers instead of bread.

What chicken to use

Last night I roasted a chicken (well actually 2 because my family eats a TON) and I did have some leftovers so that is what I am using for this recipe.

You can easily substitute a store bought rotisserie chicken or cooked and shredded chicken breast if that is what is easier for you. It is super delish when eaten on a crisp, cool cucumber and this is definitely a guilt free, easy lunch! So here we go…

Take two cups of cooked shredded chicken and add them in your bowl

How to make Whole 30 friendly chicken salad

Finely chop onions and celery adding them to the bowl with the chicken. If you are a red onion person, then use your beloved red onions instead of yellow ones. IMO red onions are a little too strong for this dish (although I’m not a red onion hater just to clarify!).

Chop or sliver your almonds and quarter the grapes adding them in with the salt and pepper. Give it all a toss.

Now here is where you can use your Whole 30 compliant mayo if you are following that right now. This is a really good recipe here. Add it in and give it a stir and throw it on your cucumbers or bread and there it is!! Tasty, fresh, crispy, crunchy, healthy, delicious Whole 30 friendly chicken salad!

Ingredients
 
 

  • 2 Cups Chicken cooked and shredded
  • 1 Stalk Celery
  • ½ Cup Red Grapes about 15-20
  • ¼ Cup Onion
  • ¼ Cup Almonds
  • ¼ Cup Mayo
  • ¼ tsp Salt
  • ⅛ tsp Pepper

Instructions
 

  • Cook and shred the chicken into bite-size pieces, adding it to a mixing bowl when done.
  • Finely chop the celery, onions and almonds adding them to the bowl.
  • quarter the grapes and add all other ingredients to the bowl.
  • Mix well and serve on cucumber slices, bread, croissant or however you like to eat chicken salad
