Instant, 3-ingredient, GUILT-FREE pineapple sorbet.
…need I say more? Technically, you can even make it a 2-ingredient affair if you skip the mint. Yes, the world can be a magical place sometimes.
No sugar. No churning. No fancy equipment. No waiting. No nonsense. No regrets. All you need is very ripe and sweet frozen fruit, lemon/lime juice and a food processor/blender and you are left with this incredibly refreshing, cooling, zesty frozen dessert! Adding fresh mint just takes it all up a notch.
(P.S: how GORGEOUS is this pineapple??)

Instant Pineapple Sorbet
Ingredients
- 500 g ripe pineapple cut into chunks and frozen
- 1 bunch fresh mint leaves
- 4 tbsp fresh lemon/lime juice
Instructions
- Place everything into a food processor or blender and blend until smooth. Taste and if you feel that it needs extra sweetness add a bit of honey to taste. Serve immediately or freeze for 10-15 minutes before serving for a firmer texture.
